I had cooked a whole bunch of quinoa the other day. I used a lot of it for the quinoa salad bowl that I posted on Monday (link here), but I had some leftover. I decided to make these little bites.
I made other bites last week (link here) with dates and nuts which were delicious. These bites today were a little different. They have cooked quinoa, oats, banana and cinnamon. Four ingredients, it really couldn’t be simpler.
These bites are super healthy with the quinoa and there is no added sugar, just the sweetness from the banana. I think kids will eat them up with no complaints.
I love to keep these in the freezer and take one (or two) out whenever I want a little snack. I like eating them frozen too, but of course you could wait a couple minutes to let it though slightly.

Ingredients:
- 1 cup cooked and cooled quinoa
- 1/3 cup oats
- 1 banana, mashed
- 1/2 tsp cinnamon
Directions:
- Combine all ingredients in bowl. The mixture will be a little wet.
- Scoop out tablespoon-sized balls and place on baking sheet.
- Put tray in freezer for 30-45 minutes to let the bites firm up. Once firm, place bites in container or ziplock bag and return to freezer for up to 3 months.
