Nutty Energy Bites

I’ve been trying to make something interesting almost every day. Cooking has always been a great outlet for my creativity and energy, and I’m using my extra time at home to make more special things. If you saw my crackers the other day (link here), those were really fun and can’t wait to make them again. I’m still just so impressed with how easy they were and how well they turned out.

These little energy bites are similar to recipes I’ve made before. I looked at a recipe online (link here) and adjusted the ingredients to make it my own. My complete ingredient list is down below. The recipe also calls to make bars but I ended up making balls/bites.

I mixed everything in my food processor and it looked pretty good to me – everything was finely chopped and it was able to form in a ball when squeezed together. It was a little crumbly but I went ahead and put it on a silicone baking mat and pressed it into a nice rectangle. I figured some time in the fridge would help firm it up. 30 minutes later and it was still super crumbly, I couldn’t lift it off the mat without it falling apart.

I decided to take little handfuls and make energy balls instead. I had to squeeze the mixture quite firmly to ensure it would stay whole but it seemed to work better. I got 12 bites from the batch and I’m storing them in the freezer.

They taste really good but I’m just sad they don’t hold together as well as I hoped. Maybe my dates weren’t super fresh/soft? Or maybe I should’ve processed the mixture longer? It’s just things to think about for next time.

These are a great snack that are super nutritious and pack lots of nutty flavour.

Ingredients:

  • 1 cup dates
  • 1/3 cup almonds
  • 2 tbsp natural peanut butter
  • 1/4 cup unsweetened shredded coconut
  • pinch salt
