Many of the past 20ish recipes that I’ve made have been Mexican inspired. Even though they’ve had some of the same flavour profiles and ingredients, they are all still unique and delicious in their own ways. These fajitas were no exception. Adding regular fried eggs to fajitas is a great way to step up the norm. They were an awesome breakfast.
I don’t usually incorporate too many spices in my morning meals (normally just salt and pepper), but it worked really well here. The sauteed peppers and onions had lovely cumin, chili powder and red pepper flakes which gave so much Mexican flare and a touch of spice. The veggies were the big flavour carriers of the dish and they went well with the other components of the fajita. They also had a little crunch remaining which added texture.
So in the tortilla, it was an overeasy egg with the creamy simple guacamole, then some of the peppers and onions. On top of all that was crumbled feta, cilantro and black pepper. I added some frank’s hot sauce after taking the picture.
There were so many good flavours and textures and it was a nice meal. I will say that the runny egg yolk made things a little messy to eat but as long as you eat over a plate and have a few napkins nearby, you should be good to go haha. I guess you could also eat with a fork and knife but what’s the fun in that? 😛
