Pico de gallo is a fresh salsa, traditionally made with tomatoes. This pico, made with pineapple put a tropical twist on that classic. This was a very summery salsa which almost took my mind off the cold winter outside.
Fresh salsa is just leaps better than jarred stuff. If you can, you should always try to make fresh. When you start with juicy pineapple, jalapeno, limes and fresh herbs, you know the result is going to be tasty.
I thought this salsa would be super acidic from all the lime and pineapple, but it was surprisingly balanced. The bell pepper added a good amount of sweetness and the jalapeno and red onion gave some bite.
I just served this salsa with tortilla chips which is the easy thing to do. Nothing wrong with easy here, chips and dip is a great appetizer or dish to serve at a party. If you want to get fancier, you could make this salsa to have with tacos or fajitas – the salsa would add so much flavour. Another option is so make it and serve over baked/bbq chicken (just like I did for a recipe from yum & yummer – link here). Whatever you choose, this salsa will be the star.
