Recipe #68: Roasted Salsa Verde

I am always down for trying new things and I was excited for some salsa verde (green salsa). I’ve never had salsa verde or even had a tomatillo before, so this was going to be fun.

The recipe was super easy. You just have to broil the tomatillos (and jalapeno, if using – I wanted to keep my salsa mild so I kept it out), then blend it with onion, cilantro and lime. That’s it. Broiling/cooking the tomatillos makes them a little sweet, so it goes well with the sour lime.

This salsa is so fresh and bright. It was delicious with chips and would be perfect instead of traditional red tomato salsa in any dish.

If you’re like me and have never tried tomatillos or salsa before, you should try it. They’re a little tangier than regular tomatoes but it’s not overpowering. And I think I will try it with the jalapeno next time for some heat.
