Recipe #67: Zesty Black Bean & Corn Salad in Lettuce Cups

I’m a fan of nice bean salad. It needs to have lots of bright flavours and textures or else it can be a little boring. There was nothing boring about this salad. It was super fresh with the cilantro and zippy with the lime juice. It also had lots of texture from the radish and sweetness from the corn. It was good to eat and look at.

As you can see, I did not make lettuce cups. I couldn’t find butter lettuce at my grocery store so I turned it into a bowl instead. I put a base of spring mix greens in the bottom and a big scoop of bean salad on top with some avocado. It was almost a meal. The beans have lots of protein and fibre which makes it filling.

I did not put feta cheese which made this salad vegan and dairy free. To make up for that saltiness, I ate some salad with tortilla chips which added more crunch and flavour. If you want the healthier option, you can eat it as the salad on lettuce/lettuce cup, but if you want a little treat, definitely try it with tortilla chips šŸ˜›
