I’ve never had tortilla soup but it sounded pretty good just reading through the recipe. It’s a tomato based soup with beans and tons of veggies, as well as yummy toppings, including homemade crispy tortilla strips. I couldn’t wait to make and eat it.
It did take a bit of time to chop all the veggies but it wasn’t bad at all. I love how much goodness is packed into the soup, I knew it was going to be a good one. Aside from chopping, this soup came together really painlessly. The broth was rich and tomato-ey with a bit of spice from the jalapeno pepper. It definitely wasn’t overly spicy which I liked.
The best part is the crispy tortilla strips. I mean, it wouldn’t really be tortilla soup with them. I used flour tortillas instead of corn because that’s what I found at the grocery store. Some of them go at the bottom of the bowl and some go on top – you end up with some soft tortillas and some still crispy. It’s cool to have different textures of the same ingredient.
Like I mentioned before, this soup had some heat, but it was not overpoweringly spicy. The radish and feta cheese on top helped to cool things down a bit. You could even add a spoonful of sour cream to cool things down more if you wanted.
Overall this was a delicious and hearty soup that I would eat any day of the week. Your family will love the colours and flavours of this dish.
