Recipe #51: Moroccan Butternut, Chickpea & Couscous Stew

If you’re one of those people who make one of their new year’s resolutions to eat healthier/more veggies, I recommend this soup for you. It is a perfect colourful and nutritious dinner. There are so many things going on in this recipe – ingredient-wise – but the result is worth it. You end up with this delicious soup that is so hearty and perfect for the cold winter nights.

So as I mentioned that there were lots of veggies, that means there was quite a bit of chopping to do. I hope that doesn’t deter you from making it though. Nicely chopped veggies will cook faster and you can eat a variety of things in each spoonful of soup. The vegetables, along with the couscous and chickpeas makes this soup so filling, all you need to eat with it is some toasted bread.

This soup was so aromatic with all the garlic and spices. It smelled so good while cooking, I could hardly wait to eat a big bowl of it. All the flavours really come through in the final result too which I was happy about. This was just a tasty meal and leftovers reheat very well.
