I have never heard of this dessert before this recipe. If you look online, the pictures of “ambrosia dessert” show these bowls full of creamy fruit salad with lots of marshmallows. It does not look appetizing to me at all but this is apparently a classic american dessert. I’d rather just have plain fruit without all the extra calories.
This cookbook’s version of ambrosia is a lot lighter and fresher. There are no marshmallows and putting yogurt on top (as opposed to mixed in) is optional. I opted for no yogurt to keep it dairy free. I also used maple syrup instead of honey to make it vegan.
So this ambrosia had orange and pineapple, as well as pomegranate which is not traditional. I thought the combination of those 3 fruits worked really well. It also has lots of coconut which gives some different texture and a bit of a tropical vibe with the pineapple.
This was such an easy dessert and a great way to spruce up regular fruit/fruit salad. I don’t think I would ever eat a classic ambrosia but I could definitely have this pomegrate ambrosia again.
