Recipe #23: Roasted Summertime Salsa

Happy halloween! I was never big on going out on this day, I usually like to stay home and watch movies. But if you’re going out, just be safe and have fun πŸ™‚ For those of you staying in, chips and salsa would be a great snack that doesn’t even take too long to make.

I actually started this month off with a salsa recipe (link here) and now here I am, closing the month with another one. The main difference between the two recipes is that the first one (“salsa 1”) uses canned tomatoes and this one (“salsa 2”) uses fresh tomatoes that get roasted in the oven. The flavourings were the same – lime, onion, garlic, cilantro, jalapeno, salt – but I liked this fresher salsa (#2) more.

I thought salsa 2 was much less acidic which must be from using fresh tomatoes instead of the canned. The flavours were just a lot lighter and brighter. It took like 10 more minutes to make because of roasting the tomatoes but it was worth it for the extra flavour. And I will admit that I was a little scared to broil the tomatoes because I didn’t want to burn anything, but I kept an eye on them and they turned out perfectly. If I can do it, you can too πŸ™‚

I know I mentioned this in the other post, but making your own salsa is so easy, as well as tastier and healthier than store-bought. I will definitely make it again to serve any day.
