I know my previous post of scrambled egg toasts (link here) is a nice sit down breakfast but sometimes you don’t have time in the morning to make a meal. Or maybe you want an easy afternoon snack. These granola bites are perfect for either situation.
These bites are similar to the energy bites that I made a while ago from yum and yummer (my post here & recipe video here). There are also so many energy ball recipes online. They all contain some combination of oats, nuts, seeds, dried fruit, nut butter and spices. They are great to make ahead and store in the fridge so that they are always available to eat.
My oat mixture was perfect. It wasn’t too sticky and I was able to form the balls quickly and with ease. Also, rolling them in shredded coconut added nice extra texture and I feel like it actually prevented them from sticking to each other in the fridge.
The only change I made to this recipe was using chopped peanuts instead of pecans or walnuts. I just got double peanut action which was delicious. These are so versatile though, and as long as you keep the ratio of dry to wet the same, you can put whatever nuts/seeds/fruits you want, making sure to chop any big items into small pieces too.
I really liked the cinnamon in the recipe. It gave a bit of warmth and works well with the oats/oatmeal vibe. Also I liked that they were not overly sweet. The maple syrup gave the perfect amount of sweetness for me. The pinch of salt also helped to cut a bit of the sweetness and kept everything balanced.
These are a perfect little anytime snack with tons of texture and are very nutritious. You can feel good about eating one of these any day.
