Strawberry Oat Bars

For the last strawberry post, I wanted a nice dessert/snack. Instead of just a classic pie or crisp, I chose to make these strawberry oat bars. I used this recipe (link here). They were so yummy, and they were not too sweet, which I liked. The recipe includes an optional glaze but I think they were perfect without it.

I did make a few small changes to this recipe. First, I used half fresh and half frozen strawberries. I thawed the frozen ones and drained any liquid before chopping them up, then mixed them with the fresh ones. I also added an extra teaspoon of cornstarch to soak up the excess moisture from those frozen berries.

The other thing I did was tossing everything (berries, cornstarch, lemon juice and sugar) together and then putting that on my oat crust. The original recipe says to sprinkle the individual ingredients in the pan but I figured my way would get everything well-mixed and the final result would be the same anyway.

My squares took the full 40 minutes to bake and they came out looking beautifully golden brown. Side note: they should make an oatmeal cookie air freshener because that’s exactly what the house smelled like while these were baking and it was so good!!

They were pretty quick and easy to put together and they were delicious. The oat crust held together nicely and tasted like a chewy oatmeal cookie. YUM. Then the sweetness of the crust went well with the slightly tart strawberries. It was a good balance. I have nothing bad to say about these bars. You should just make some for yourself and enjoy with me πŸ™‚
