If you know me at all, you know that I love avocado. Not sure if I’ve mentioned before though, but I actually used to hate it. I only came to like it in the past couple of years. I never liked the texture but I guess now that I’m cooking more and becoming a sort of “foodie”, I’ve come to appreciate everything the avocado can offer (I’m making it sound so dramatic haha).
When I usually make avocado toast, I usually keep things pretty savory with veggies and spices on top. I have never put fruit or other sweet things… until today. You don’t really need a recipe for this but I got the inspiration online (link here).
This was such an easy meal and it would be good for any time of day really. Because there are so few ingredients, you can really taste each one front and center. These are all of the ingredients: toast, avocado, strawberries, coconut, maple syrup and salt. I know it might sound a little strange to put such sweet things on top of avocado but it weirdly works really really well. I’m sitting here writing this and eating my toast, and all I can think about is why didn’t I make a second slice? It’s that good.
If you’re tired of old savory avocado toast (I don’t even know if that’s possible), you should switch things up and go sweet 🙂
