Peanut Butter & Banana Cookies

Peanut butter – yum. Banana – yum. Together – even better. Peanut butter and banana a pretty classic and delicious combination. I make peanut butter cookies all the time but adding banana to them is genius. I found this cookie recipe (link here). This is the dessert you make if you’re in a hurry or just don’t feel like making anything complicated. You can’t go wrong with cookies, and like I said, peanut butter and banana are such a good mix.

It was very simple and I love that it only required one bowl. They weren’t overly sweet which was nice and the baking powder made them super fluffy and light. I also liked that they had half whole wheat flour, made them a little healthier.

A few notes on the cookie recipe, if you want to make them

  1. This dough is very wet – you don’t roll out balls – just take scoops of dough and place them on your tray
  2. They don’t spread too much while baking so ensure you don’t make your cookies too thick/tall
  3. The recipe doesn’t say it, but the yield is about 40 cookies. I made a half batch and got 22 cookies. If you change up the size though, then you’ll get a different amount.

I really enjoyed these cookies though. If you want to take your dessert to another level, you can use these cookies to make an ice cream sandwich. Yum πŸ™‚
