Scrambled Egg Breakfast Tacos

If you’re tired of the same old breakfasts, you should turn your scrambled eggs into tacos! Who doesn’t love the sound of that?! You can now have tacos for any meal of the day πŸ™‚

The idea came from just having leftover mini tortillas. At first I thought about making little crispy tortilla bowls then stuffing them with some sort of egg mixture. But then I thought why not just make little tacos instead. So that’s what I did.

I started off by sauteing a whole bunch of spinach until it was nicely wilted. To that, I added some liquid egg whites (you could use beaten whole eggs too) to the pan, and cooked them until scrambled. I also added a bit of old cheddar cheese to that mix for extra flavour, and seasoned with a touch of salt and pepper. This mixture was perfect at this stage, you could eat it like that if you wanted, but I was committed to making tacos. I spooned a bit of the egg mixture into each of my tortillas, then topped them with a bit of salsa and avocado.

They were so good. Every bite was super flavourful and I really liked it. Plus, even though I used all the same things I would normally use to make my breakfast, this one was better because I could eat with my hands.

If you love spinach (or want to incorporate it more in your life), wilting it down is one of the best ways to go. It’s much more enjoyable to eat than when it’s raw and you can eat so much more because of how it shrinks down. Ingredients:

  • 1-2 cups spinach
  • 1/4 cup egg whites or 2 whole eggs, beaten
  • Salt and pepper, to taste (~1/4 tsp)
  • 2-3 tbsp shredded cheese
  • 3 mini tortillas
  • 2 tbsp salsa
  • 1/4 avocado

Directions:

  1. Heat a non-stick pan over medium heat. Add spinach and cook until wilted, 2-3 minutes. Add egg whites/eggs and mix with spinach. Season with salt and pepper. Cook, while stirring, another 2 minutes until eggs are opaque and no longer runny. Sprinkle cheese and mix everything until it is melted.
  2. Lay tortillas on a plate and spoon egg/spinach mixture on top. You may have extra filling. Top with salsa and avocado. Enjoy while hot.
