Waldorf Salad

Wow I’m already starting week 4 of this challenge! If you want to check out all the things I’ve already made, you can click the different links here: cauliflower, sweet potato, zucchini. And as always, if you have any ingredient suggestions, let me know πŸ™‚

This week’s ingredient is apples! I love apples because you can use them in sweet and savoury dishes. I love putting apple in my grilled cheeses – it adds a nice sweetness and crunch.

This first recipe is a fresh waldorf salad. This is one of those salads that are so simple but taste so good. There are only 7 ingredients, including salt and pepper, so it couldn’t be easier. It’s also a great salad for the summer because it’s super refreshing and has tons of crunch.

I guess my waldorf isn’t as traditional because I didn’t put grapes in it. I’ve just always made it this way and really enjoy it. You can also add chopped cooked chicken to turn this salad into a meal.

Ingredients:

  • 1 medium apple, chopped
  • 3 celery stalks, chopped
  • 1/4 cup walnuts, chopped
  • 2 1/2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1/4 tsp each: salt and pepper (or to taste)

Directions:

  1. Combine mayonnaise lemon juice and seasoning in small bowl
  2. In larger bowl, first combine apple, celery and walnuts, then mix in dressing
  3. Serve immediately

Yum! And I’m so excited that it’s dairy free! Great idea about adding chopped chicken to make it more of a main meal. Love it. I’ll try it this weekend.
