This week’s ingredient is apples! I love apples because you can use them in sweet and savoury dishes. I love putting apple in my grilled cheeses – it adds a nice sweetness and crunch.
This first recipe is a fresh waldorf salad. This is one of those salads that are so simple but taste so good. There are only 7 ingredients, including salt and pepper, so it couldn’t be easier. It’s also a great salad for the summer because it’s super refreshing and has tons of crunch.
I guess my waldorf isn’t as traditional because I didn’t put grapes in it. I’ve just always made it this way and really enjoy it. You can also add chopped cooked chicken to turn this salad into a meal.
- 1 medium apple, chopped
- 3 celery stalks, chopped
- 1/4 cup walnuts, chopped
- 2 1/2 tbsp mayonnaise
- 1 tbsp lemon juice
- 1/4 tsp each: salt and pepper (or to taste)
- Combine mayonnaise lemon juice and seasoning in small bowl
- In larger bowl, first combine apple, celery and walnuts, then mix in dressing
- Serve immediately

Yum! And I’m so excited that it’s dairy free! Great idea about adding chopped chicken to make it more of a main meal. Love it. I’ll try it this weekend.
