When I was searching for an interesting recipe to use for day 3 (today), I was having some trouble. I wanted to do something that I had never done before. There are lots of basic roasted or stuffed sweet potato recipes out there, but I wanted more than that. I also wanted something that wasn’t a side dish. So I got to thinking. I am always looking for new things to make for breakfast time, so I changed my search accordingly.
After searching online for a few minutes I found the perfect recipe from Oh She Glows (casserole recipe). The idea of combining humble oatmeal with banana and sweet potato and giving it an awesome sugary topping was a recipe for success. I followed everything as written, using regular milk and butter, but I changed the pecans to walnuts because that’s what I had on hand.
I actually made the oatmeal part the night before (which was delicious on its own) then sprinkled the topping and baked it the next morning. I took it out 30 minutes in advance to get back to room temperature and then I baked and broiled as directed. It turned out wonderfully.
This breakfast casserole has so many different flavours and it reminded me of other foods that I love to eat. I really liked the creamy banana and sweet potato with the warm spices. And then you get a bit of the crunchy nutty crumble which adds another level of flavour and texture.
Not only is this oatmeal delicious, it’s also super healthy. It’s packed with fruit and veggies which have tons of vitamins and minerals. Then the oats and chia have lots of protein and fibre which help to make it super filling. I was honestly full for hours which was amazing.
I’m just so happy with this recipe. It was a good way to end sweet potato week. Stay tuned for next week, I have some tasty recipes planned 🙂
