Last week, I was scrolling though my instagram feed (@lindsays.liife & @lindsays.kitchenn – haha sorry, shameless plug). Anyways, so I was going through lots of posts, mostly food because I am obsessed, and I saw this post for scones (account: @thecatladyskitchen). I was so intrigued because these scones featured ginger and orange which are 2 of my favourite flavours.
Soon after I saw the post, I sent her a message asking for the recipe and before I knew it, I got the answer. She used a basic scone recipe from Sally’s baking addiction then added those flavours to them. Right after that, I checked to see if I had all the ingredients because I wanted to make them ASAP. Unfortunately I was missing butter, so I had to wait until the next day when I could go to the store.
So, the next day, I got some butter and I made the scones. They were everything I hoped they would be. They were super light and flaky (from the butter, make sure it stays super cold) and I loved the triple ginger power (fresh grated, powder, crystallized). I probably could have added more ginger because I just love a big punch, but it was a good amount. It also went really well with the orange glaze.
I did make a couple changes to the recipe though. First one was that I used plain greek yogurt instead of the heavy cream in the dough (same amount). I had made a scone recipe in the past that called for yogurt, so I figured I could do the same here, and I was right. This makes them a little less decadent, which means you can eat more of them 😉 . I did need to add about 1 tbsp milk to the dough because it was a little dry when trying to form a ball and I just brushed the scones with milk before popping in the oven. Second change was for the glaze, I only used 2 tbsp orange juice (instead of 3) because I wanted a slightly thicker consistency.
