Sesame Edamame Salad

Watch out, here’s another salad post. I’ve been making so many salads recently, they’re just so fresh and summery and I love it. Anyways, this salad recipe is not mine, I found it online (recipe here). I made sushi for dinner and wanted a nice side to go with it. When I go out for sushi, I always love to start with some edamame, so I searched the web for a nice edamame based salad (with asian flavours to match japanese sushi), and I found this one. Plus, I had all the ingredients so it was meant to be!

I followed the recipe to a tee, which is rare because I like to do my own thing most of the time. Oh wait, I made one small change – used shredded carrot instead of spiralized, no big deal there.

This was a delicious salad though. I love how you can really taste the sesame flavour but it’s not overpowering at all. It is nicely balanced with the sweetness from the honey. I also like the addition of carrot and zucchini, so that it’s not just edamame. It gives more colour and textures.

Like I said, I ate this as a side dish to go with sushi, but it could be a little lunch on its own. The edamame has lots of protein and makes you full plus there is tons of nutrition from the carrot and zucchini. If you want to see what the sushi looked like, you can click the link here – this is sushi that I made a little while ago but I made the same varieties this time too.
