Watch out, here’s another salad post. I’ve been making so many salads recently, they’re just so fresh and summery and I love it. Anyways, this salad recipe is not mine, I found it online (recipe here). I made sushi for dinner and wanted a nice side to go with it. When I go out for sushi, I always love to start with some edamame, so I searched the web for a nice edamame based salad (with asian flavours to match japanese sushi), and I found this one. Plus, I had all the ingredients so it was meant to be!
I followed the recipe to a tee, which is rare because I like to do my own thing most of the time. Oh wait, I made one small change – used shredded carrot instead of spiralized, no big deal there.
This was a delicious salad though. I love how you can really taste the sesame flavour but it’s not overpowering at all. It is nicely balanced with the sweetness from the honey. I also like the addition of carrot and zucchini, so that it’s not just edamame. It gives more colour and textures.
Like I said, I ate this as a side dish to go with sushi, but it could be a little lunch on its own. The edamame has lots of protein and makes you full plus there is tons of nutrition from the carrot and zucchini.
