Easy Blueberry Cobbler

I love to bake but sometimes it takes so much time and effort. I had this can of blueberry pie filling and wanted to use it. I don’t usually buy this but it was on sale for $0.25 at the store and I couldn’t resist. I found a recipe online for a blackberry cobbler and I just made the topping part and used the pie filling instead of blackberries. So I dumped the whole can in a glass dish and spread it into an even layer. Then I spooned over the batter in random spots. I probably could have spread it to cover all the blueberry but I liked how it looked.

I popped it in a 400 degree oven and baked it for about 30 minutes. You want the topping to get nice and brown. I also served it with some ice cream – it was a nice hot-cold contrast.

You could make this sort of thing with any pie filling or fresh fruit with a touch of lemon and sugar (which is what the recipe actually called for). It’s just such a simple dessert if you need something in a hurry.

Another option though, if you have pie filling, is to make dump cakes. All you need is a can of pie filling, a box of cake mix and a stick of butter. I didn’t have cake mix so that’s why I went with the cobbler, but I’m sure it would have been delicious. If you’ve ever made a dump cake, let me know how it turned out! 🙂
