Do you ever have leftover food in the fridge and want to use it up in a creative way? That was how I felt yesterday. I had cooked a whole bunch of lentils and I used about half of them to make a delicious lentil bolognese sauce. But I still had a few cups of cooked lentils remaining, along with some ground turkey meat in the fridge, so I looked online.
I found this recipe for lentil and turkey meatballs and they were delicious. They had a nice flavour with all the spices, but I think some fresh garlic would have been a nice addition too. The one thing I would do differently if I make these again is that I’d chop the lentils with the onion and carrot in the food processor, just to get them a little smaller and more blended in.
It worked out nicely though because the lentils gave the meat mixture more bulk which allowed me to make more meatballs than if I had used the ground turkey alone. But like I said, they had a good taste and were super moist. I served them with mashed potatoes and homemade onion gravy which put them over the top. I mean, you could probably put gravy on anything and it would taste good, right? π
This was a very comforting and homey meal which was nice.
