Recipe #101: Lemon Chicken & Orzo Soup

Who doesn’t love a bowl of warm chicken soup? There’s nothing fancy about it but there’s something so comforting when eating it. This lemon chicken & orzo soup had the classic flavours but the addition of lemon made it something new. It definitely adds a little tang that you wouldn’t expect from typical chicken soup but it works with the other flavours and herbs.

For the chicken, I took 2 raw chicken breasts and poached them in a little pot. They took about 10 minutes to cook and then I just chopped them up. This was such an easy soup – just broth, veggies, orzo and chicken – and it is almost a meal on its own. I served it with some bread for dipping. I really liked the orzo – it gave a different texture instead of typical rice or noodles. I think I should have added a little more though because it got hidden in all the veggies. I really liked the yellow colour from the turmeric too, it made the broth a little prettier.
