The meat was not missed in this meal. This was a delicious vegetarian (well actually, vegan since I did not garnish with cheese) dinner that was so hearty and it was super protein packed from the beans and quinoa. It was also really easy to put together, aside from a little bit of chopping, and the best part is that it only uses one pan/skillet. It was a great meal to make after a long day at work or when you’re just short on time.
Now let’s talk about the actual flavour of the dish. I liked all the spices, they gave a nice taco/mexican vibe. And the little kick from the cayenne pepper was the perfect amount of heat. It was just a super tasty meal that you can feel good about. I garnished mine with tomato, avocado and cilantro which gave a nice freshness at the end and helped to mellow the heat.
