Mmm muffins. They’re one of the easiest desserts and there are so many different varieties you can make. I’m not a huge fan of super chocolatey desserts but these muffins are honestly amazing. They are actually pretty healthy too, which makes them relatively guilt free, so you can eat multiple without feeling bad about it.
Back to the chocolate aspect. Since there are chocolate chips and cocoa powder in the muffins, they are a little rich. The richness almost reminded me of a brownie, but they aren’t nearly as heavy because they are so fluffy.
There are so many good things in these muffins, so let’s get into that. First, I love that it is about 50% whole wheat instead of just white flour – that adds a lot of fibre and helps to make them more filling. Next, there is almost no added fat in the batter (only a couple tablespoons of oil); the muffins are super moist and fluffy because of the greek yogurt, applesauce and zucchini. Also regarding the zucchini, I love that there are hidden veggies in these muffins, it adds extra vitamins and nutrition, but without changing the flavour of the final product.
