Recipe #84: Roasted Cauliflower

I’m a huge fan of roasted vegetables. Whenever I need a side dish for dinner, I just see what I have, chop it up, toss with olive oil, salt and pepper and bake. It’s the easiest thing ever. Cauliflower is one of my faves too. This recipe was super simple and only had a few more ingredients than I would typically use. I could really smell the thyme and garlic when it was in the oven.

I used nutritional yeast instead of parmesan but it didn’t turn out how I expected. I thought it would have a nice salty and cheesy taste, but it didn’t for some reason. Maybe I didn’t put enough, not sure. If I make this again, I will try it with parmesan and see if I like it more. But overall, it was a good side dish because of its simplicity.

Final thoughts: nice roasted veg with hints of garlic and thyme.
