Recipe #77: Double Chocolate Mousse Cheesecake

If you need a special dessert for valentine’s day, this cheesecake would be perfect. I mean, by the time you see this post, it’s gonna be too late to make this cheesecake but there’s always the weekend or next year? I actually made this last weekend for my brother’s birthday – this was a good replacement for a classic birthday cake. Everyone loved it and even took home some leftovers.

This cheesecake did require a few different bowls to prepare all the components, but I didn’t mind because it was a lot easier and took less time than making a traditional baked cheesecake. You just have to make sure you give it enough time to harden in the fridge or else it might fall apart when serving. Since I only had a 10-inch springform pan, I thought it would be a good idea to make 1.5x the recipe. That way, it would still be nice and tall.

There is lots of cream cheese, cream and chocolate but they make this awesomely delicious filling, which turns into a nice mousse cheesecake once it has set in the fridge overnight. And the chocolate cookie crumb crust is the perfect base too.

So it might be obvious, but this is a super decadent and rich cheesecake. It also has a super deep chocolate flavour which is great if you love chocolate. Because of that, you can really serve a crowd, since you don’t need to eat such a big slice of it. Also, if you eat a small piece, you feel less guilty because this dessert is definitely a splurge. But when you serve it with fresh berries – like I did – it balances everything out (right? haha). It’s fine to treat yourselves sometimes.

Final thoughts: this is a perfect dessert for any special occasion.
