Recipe #74: Sweet Potato Quinoa Cakes

I have made something similar to these before and I liked them very much. It’s a nice mixture of quinoa, sweet potato, black beans and all the spices. They tasted delicious and I would eat the patty mixture in a burrito or on a salad. The one issue I had before and I had again with these, is that the patties are very soft and start to fall apart when flipping them in the pan. I managed to keep them all pretty whole though, but of course, using the best ones for the photo haha.

I cooked the sweet potato and quinoa in the morning so that they would have enough time to cool and be ready for when I wanted to make the patties. Then a few hours later, I made the mixture (which took only 5 minutes) and set it in the fridge for a couple hours. Even the cold mixture tasted good.

I got 6 patties total and cooked them in a frying pan for a few minutes per side. Like I said before, they were very delicate but I managed to flip them all relatively well and they got a nice golden brown. Instead of serving them with hummus, like suggested, I made a sriracha mayo to put on top. It was super good.

Final thoughts: great vegetarian patties, just have to be careful with the cooking.
