Quinoa is becoming one of my favourite foods and I loved it in these bites. I mean, you can’t really go wrong when you mix it with cheese and broccoli. They are a perfect little snack or a lunch with a salad (which is what I did).
The only change I made to the recipe was replacing the parmesan cheese with a couple tablespoons of nutritional yeast. But it had the same salty and cheesy flavour so it worked well. I really liked the touch of broccoli in there, added a little extra texture and nutrition. For next time though, I think I will add more broccoli because it was sort of hiding in all the quinoa – I guess if you were feeding them to children, it would be perfect. But for a non-picky eater like me, I can throw in all the broccoli I want.
This recipe was super fast and easy to prepare and they only took 15 minutes in the oven to cook. I was nicely surprised by how well they held together after baking. I guess once all the cheese melted, it worked with the egg to solidify everything. They also smelled really good while they were baking so I had a feeling they would taste good too. And I was right! They had really good flavour and were quite filling.
Final thoughts: these were just super yummy little bites.
