I just wanted to start by apologizing for not posting last week. I was spending time with family, which was much needed and enjoyed. It’s always nice to take a step back and relax. But I am here now and back for recipe 70!

This was a really flavourful chicken dish and made for a delicious dinner. First off, let’s talk about the chicken itself. The marinade had such a good flavour, nice balance of sweet, spicy and sour. And I didn’t grill the chicken because it’s like -20 degrees celcius outside and I don’t want to catch a cold just to make my dinner. So instead, I baked then broiled the chicken in the oven, to cook then give a little caramelization at the end. It turned out quite well.

Because the chicken wasn’t yummy enough on its own, there’s a grilled pineapple salsa to serve on the side. Again, I didn’t grill the pineapple (and bell peppers) but I put them in a dry skillet to cook and soften. They even got a little caramelized and had an almost charred flavour which was perfect. The salsa was super fresh and I liked the hint of spice with the jalapeno pepper. This was an excellent colour boost to the chicken

Final thoughts: yummy chicken and great salsa = awesome dinner
