This is a very spontaneous post. I made my lunch – by throwing things into a pot – and it turned out pretty well so I decided to share it here.
I had leftover cooked plain quinoa in the fridge and wanted to make it more exciting. So I put about 2 cups of spinach into a pot with the quinoa and added a splash of water, then got that heating up. Once the spinach was wilted, it was time for seasoning. I added some kale pesto (from the brand Sunflower Kitchen which is a Toronto company), as well as chili flakes and a bit of nutritional yeast. I also added some sliced almonds last second for a bit of crunch.
This was a delicious lunch and it would be a great side dish for chicken or fish dinners too.

Quinoa and spinach are some of my favourite foods but I’ve not eaten them together. Need to try this combo!

Well, getting hold of fresh spinach in the middle of winter might be difficult here, so it’ll have to wait a while. π

You can use frozen spinach if that is available!

Yeeeeah, but it doesn’t taste that good when thawed, frozen spinach is only fine when I plan to bake it in the oven in a quiche and such.
I’ll wait for spring!
