I know the corn for this salsa is supposed to be grilled but it snowed last night and there was no way I was going outside to grill (and unfortunately I do not have an indoor grill). So instead, I thought roasting the corn would give it a nice flavour – and it did! I roasted the corn directly on the oven rack for about 15 minutes and it got a little roasty. The corn got super sweet and it was perfect in this dish.
I really liked the freshness of all the ingredients and it made for a nice mexican salad/salsa. Having such a nice summery side dish makes me miss hot weather that much more. I will definitely make this again, in the summer, when I can get local ontario corn.
