Here’s another good holiday post. I had seen this recipe for sugar cookies dipped in white chocolate and crushed candy cane pieces which looked good but I wanted to change it up slightly (Original recipe: Sugar Cookie Recipe).
I decided to sub out some of the flour (1/2 cup) for that same amount of cocoa powder, to make them chocolate cookies. Then I added crushed candy cane pieces to the dough to give some mint flavour and crunchy texture.
They didn’t turn out exactly how I thought they would but they still tasted good. The candy cane sort of melted but some parts still had a crunch which was nice. And I really liked how soft and chewy they were. One thing is that I think I should have added some peppermint extract to strengthen the mint flavour. But overall, these were good cookies and I would probably make them again because they were pretty easy.
