Pizza. Always a good choice for dinner. Yes, there was cheese, but this one was pretty healthy because it was packed with so many veggies. You need the balance of good and bad. But for taste, this pizza was all good. There weren’t too many ingredients so it’s hard for it to have been bad, but everything just worked well together. It was simple and delicious.
I made a few changes to the recipe, I used:
- extra zucchini to replace mushrooms
- naan bread for crust (instead of storebought pizza crust)
- tomato passata with dried oregano and basil instead of pizza sauce
Aside from those changes, I followed the recipe as written. It was so good. The naan was the perfect size for a personal pizza and it got nice a crispy which I love. I really liked the idea of the pesto mixed with the tomato sauce too, it puts a twist on regular pizza sauce. Also, the vegetables were super tasty and there was a nice greek flavour with the feta cheese.
Final thoughts: delicious mediterranean flavours, this is one pizza you don’t have to feel bad about eating.
