I love making soups. They’re one of my favourite things to make, and I can do it without a recipe because they are so simple and versatile.
This one was beef barley with tons of veggies (carrot, onion, celery, asparagus, kale). I used tomato paste for flavour and to kind of help with the thickening of the soup. In case you’re wondering, I used about 1 cup of barley and almost 6 cups of water. I started with 4 cups and added more throughout the cooking time – 50 minutes simmering.
This was just a really good soup and very filling meal.
