If you saw yesterday’s post (Recipe #41), you know I actually made this rice to go with that chicken. Like it said in that post, these recipes went really well together. This rice had a nice coconut flavour and was super creamy, so it was tasty on its own, but it was also delicious with a forkful of chicken and the curry sauce. It did a good job of soaking up the flavours.
I liked the sweetness of the pineapple and the freshness of the cilantro – they lightened up the heaviness from the coconut milk. It was just a good rice side dish, I wish I had put toasted coconut on the top though
