These are no ordinary corn muffins. They were so corny, I loved it. The cornmeal gives the muffin a nice texture and the creamed corn keeps it super moist. The recipe was super easy to follow and turned out delicious.
In the cookbook, this recipe is under sweets & treats so I made these muffins for dessert. But after trying them, I feel like you could easy make them a side dish for chili (minus the blueberries) because they aren’t overly sweet. I actually enjoyed that about them. I also liked the pop from the lemon – it really brightened them up
Final thoughts: great corn muffin, for any time of day
