Recipe #36: Pumpkin Spice Granola

October may be finished but it’s never too late for pumpkin spice-flavoured foods. I honestly love pumpkin and pumpkin spice things. This granola was so tasty – I could eat it all day. The combination of the nuts (I used walnuts, pistachios and almonds), oats and other good stuff with the sweet pumpkin-ey mixture was so good (even before it went in the oven haha). I really liked the cinnamon flavour and the house smelled so good while it was cooking.

I will say that this was my first time making granola and I was a little nervous I would mess it up. I just followed the recipe to a tee for the cooking – I mixed every 10 minutes and took it out after 33 minutes of cooking time. It was still pretty soft at this point. But when I let it cool for 30 minutes, it got crispy and looked almost like storebought granola. I was very impressed with the result.

It tasted so good, I don’t know how many times I can say it. If you’ve ever wanted to make granola, you should definitely try this recipe. It was quite a few ingredients overall but you could make it as simple as you like – you could probably just use oats and almonds and it would be delicious – just make sure to keep the dry and wet ratio the same.
