If you’ve been following me for a while now, you’re probably wondering why my title doesn’t start with “Recipe #”. And to that I say – I haven’t been making that much interesting food that’s not part of my yum and yummer challenge, so I just haven’t felt the need to post any of that.
But today, I made a really yummy salad for lunch and wanted to share. So it was a southwestern inspired salad but I gave it a touch of asian flare with edamame beans (I knew they didn’t quite fit with the theme, but I mostly just used them for a source of protein). The salad had romaine lettuce, corn, cucumber, avocado, edamame and a delicious chili dressing. I used olive oil, red wine vinegar, a touch of mayo for creaminess, salt, pepper and chili powder.
This was a really good salad. The flavours and textures were nicely balanced and I liked the creaminess from the avocado and the dressing. Next time, I might just add some cooked quinoa to make it a little more filling.
