One of my favourite easy meals is instant noodles in a 4 ingredient peanut sauce (peanut butter, soy sauce, sriracha, maple syrup). This recipe was pretty similar but a little more complex and healthier. Maybe the whole wheat linguine made the dish a little less authentic but it still tasted delicious!
For one, the addition of garlic and ginger, gave the sauce a lot more good flavour. Also, the veggies gave the dish freshness – the frozen peas specifically, added a nice sweetness too. The only thing I would have liked is more spice to the sauce. I ended up putting more sriracha on my own serving. I just really like a kick to my food, but I know not everyone is like that haha.
Just a side note but after making this recipe, I discovered that I really enjoy extra firm tofu. It got a little crispy in the pan and it has a pleasant texture. Even if you’re a meat-eater, you would probably like it. And when it’s covered in delicious peanut sesame sauce, it’s even more likely.
