Peanut butter cookies are one of the simplest snacks to make. You mix all the ingredients in one bowl, form them into balls, flatten with a fork and pop them in the oven. Dessert is ready in about 20 minutes, start to finish.
I used a 1 tbsp measure to make the dough balls and I ended up getting 21 cookies which is a few more than the recipe said, but I am perfectly alright with extra cookies (haha).
I like the addition of the flax seed in the dough as well as the use of crunchy peanut butter, instead of smooth – I appreciate the extra texture. They turned out perfectly golden and the fork design stayed which was nice. And of course, they tasted pretty good, there’s really no way they could be bad.
This is just a perfect dessert or snack to make if you’re in a hurry. You could totally turn these into delicious ice cream sandwiches too! I actually think I might do that!
