Over the past few years, I’ve really gotten into chickpeas. They’re pretty tasty on their own but they also make for a good basis to so many things – falafel, salads, curries
This chickpea salad was a yummy one. There were chickpeas obviously, but there was lots of other good stuff like tomatoes, cucumber, avocado and red onion. It is almost like a greek salad with the ingredients (especially if you add the feta like is suggested in the book), but the dressing is a little different with the addition of dill
I really liked the freshness of the salad and the variety of textures. It was definitely a reminder of summer, even though we are into fall now
