Fancy Tossed Salad

It’s been a while since I’ve done a non-cookbook challenge post. But if you haven’t checked out my Yum and Yummer posts, you should do that – I’m up to #18 now. Here is the link: Yum and Yummer. I’m so happy with how that is going this far.

Anyways, back to this current post. I made a super yummy “fancy” tossed salad. I really just threw a whole bunch of leftovers into a bowl and tossed them together to make a great, nutritious lunch. If you’re wondering, there was iceberg lettuce, cucumber, cherry tomatoes, roasted squash (from recipe #16 Roasted Acorn Squash), edamame, leftover salmon and some asian hoisin sauce that I used as the dressing.

It was so good and colourful and pretty tasty. It’s amazing that things can turn out well even when you throw a bunch of things into a bowl. You can surprise yourself in the kitchen sometimes.
