Recipe #17: Coconut and Banana Pancakes

Pancakes are a really good breakfast. I love that these pancakes were PACKED with banana goodness – the banana flavour came through in the final product which I liked. I used the combination of white and whole wheat flours instead of the gluten free blend that was mentioned. The pancakes themselves were super fluffy and delicious. I liked the use of coconut milk instead of other milks, but I wish there was a stronger flavour of coconut – maybe if there was shredded coconut in the batter? I think I’m just getting picky now though.

This was a solid meal and I served mine with extra banana and some greek yogurt. I might make this recipe my go-to pancake recipe because it was so easy with less than 10 ingredients and turned out quite nicely.

Final thoughts: If you want a fluffy banana pancake, make these.
