I was really looking forward to this recipe because I love curries but to be honest, I was kinda let down. There were so many spices and yummy vegetables that went into the pot, but when eating it, I still felt like it was missing something. Adding a sprinkle of salt to my bowl of curry did help though – I found it odd that there was no salt in the recipe.
I really liked the creaminess that the coconut milk added, but it didn’t make the dish heavy which was nice.
So I definitely didn’t hate this recipe but it’s not one of my faves unfortunately. Maybe I’ll try tweaking it if I ever make it again
Final thoughts: good veggie curry (with a little bit of salt).
