At first, this salad did not sound very appetizing to me. I’m not really a huge fan of fruit salad, and with the addition of cucumber, mint and jalapeno pepper, I didn’t have my hopes too high that this would be a winner. But yet again, I had another successful dish. The combination of the fruits with the freshness of the mint was delicious. Then the hit of spiciness from the jalapeno and zing from lime just put it over the top.
I served this salsa with some baked fish and roasted veggies. It was a nice light meal but quite satisfying and full of flavour.
Final thoughts: kind of like an elevated fruit salad, so good.
