Lettuce wraps are one of those things that make you feel like you’re being healthy. This recipe actually was pretty darn healthy though, so it’s alright. I really liked the asian flavours that the chicken filling had and the crunch from the water chestnuts was quite nice. The only thing I changed was that I omitted mushrooms and used extra zucchini to replace it
This meal was super tasty but the lettuce wrap concept turned out to be such a mess. My lettuce leaves were a little small so all the filling was falling out onto my plate, which made it a little impractical. I ended up eating the rest with a fork just for simplicity
Final thoughts: Pretty tasty chicken filling but I would probably serve it over rice next time for a neater meal
