Recipe #5: Roasted Asian Salmon Fillets

Another amazing recipe! The salmon was super moist and flavourful. I love the pungent flavour of hoisin and ginger. It was a good combination of sweet, salty and citrus. The only change I made was using lemon juice/zest in the marinade, instead of lime.

I served this fish with a stir fry of cabbage, peppers, zucchini and onion. I made a little extra marinade and used that to flavour the veggies

Final thoughts: definitely make this salmon, and I think the marinade would be delicious on chicken too

*Just a note that I will be on vacation for the next couple weeks, leaving tomorrow, which means that I will be inactive on this cookbook challenge during that time. But once I get home, I will be back and better than before! I hope you follow me as I finish the other 90+ recipes!!

**Another note: although I will not be posting yum and yummer cooking recipes, I hope to do more travel food posts because those were fun. I know I will be eating a lot of good food on this trip so I might as well share it with you guys! πŸ™‚
