I’m really happy with how this recipe challenge is going! This salad was so good! There are so many different ingredients which all combine to make a super yummy dish. I quite enjoyed the freshness that came from all the citrus and fresh herbs.
I used brown rice as the grain and roasted sweet potato instead of squash. I also put dried cranberries cause I couldn’t find any pomegranate in the store.
This was a great light dinner on the weekend but it would be fantastic to make ahead for lunch during the week.Final thought: everyone needs to try this salad because you will love it, like I did
