Lemon Squares

I was feeling in the mood for some citrus, so I found this super simple recipe from Cafe Delites website (101 calorie lemon bars). I’ve made lemon squares before, and they always call for a lot of butter, sugar and eggs. But this recipe impressed me because it was reasonably low fat. And this crust has applesauce which helped with the moisture and lowered amount of butter required.

Another reason why I wanted to make lemon bars was that I had tried to make a different recipe about a month ago and there was way too much sugar and not enough lemon flavour, so they were just not very good. So I had an event this weekend and I thought I would try to redeem myself by making hopefully better lemon squares.

I made the recipe and they turned out fantastic! I love how tart, yet sweet these bars are. Really good recipe. I used an 8×8 pan which was perfect for this recipe because you get a nice layer of lemon deliciousness. If you use a larger pan, you would probably have to double the recipe (and adjust cooking times) or else you will have very thin layers of crust and filling which wouldn’t be very enjoyable.

But great squares overall and I would probably put in a little more lemon zest next time for a touch more lemon power. I just really love lemon flavour.
