Peanut Pasta Salad

This was a yummy lunch. It all started with some leftover cooked plain pasta in the fridge. My go-to is usually some sort of asian inspired sauce/dressing and today was no different!

I made a dressing with peanut butter, teriyaki sauce, a bit of vegetarian hoisin sauce, sriracha for heat, some ground ginger and sesame seeds. I also added a couple splashes of water because it was too thick.

Once that was all mixed and tasty, I added in some chopped lettuce, probably 1 cup which is a nice serving of veggies. Then all that was left to do was mix in some of the pasta and eat it!

It had such a good balance of sweet and heat and salty. And it was pretty healthy since I used whole wheat pasts too.
